Quick Jerk Chicken

This one is quick and easy. I didn’t even measure the spices, I just raided the spice rack and dumped everything in! I have provided measurements for you folks who are faint of heart when it comes to spices:

1. Make the Spice Rub:

1 tablespoon dried parsley

1 tablespoon onion powder

2 to 3 teaspoons ground cayenne pepper

2 teaspoons garlic powder

2 teaspoons dried thyme

2 teaspoons brown sugar

1 1/2 teaspoons kosher salt

1 teaspoon grated fresh nutmeg

1 teaspoon crushed red pepper

1 teaspoon ground allspice

1/2 teaspoon ground cardamom

1/2 teaspoon ground coriander

1/4 teaspoon ground cinnamon

Combine all these ingredients and set aside in a bowl.

2. Preheat the broiler and put your chicken breast tenders on a baking sheet, drizzle with olive oil and sprinkle with kosher salt and freshly ground black pepper

3. rub the spice mixture all over the chicken and cook under the broiler, and cook, 5-8 minutes.

Delicious and nutritious! Try serving with mango pomegranate salsa and baked sweet potatoes drizzled with a maple syrup reduction.
